Innovative Training (SIL): Processing and Value-Added Production of Seafood, implemented by Espace Sud.

Espace Sud is implementing an innovative policy aimed at fostering economic development by promoting the growth of sectors that generate wealth and jobs within its territory.

The fishing industry—and more specifically, the seafood processing and value-added sector—offers real opportunities.

To enable fishermen to engage in this activity in accordance with regulations and take advantage of opportunities in the Territory, Espace Sud has created a new certification: the Local Initiative Specialization (SIL): Processing and Value-Added Production of Seafood approved by the Ministry of Agriculture and Food.

The training program is hosting 13 trainees, who are enlisted fishermen from the south.

It began on October 2 and will end on February 8, 2018.

The 441-hour program consists of theoretical training at the CFPPA in Le Robert and practical training at companies, at the PARM (Regional Agri-Food Hub), and in the workshop of CASH TRAITEUR, a CFPPA subcontractor.

The students were able to learn about various techniques and processes and participate in the preparation of innovative products such as fish cakes, pumpkin and fish sausage, yellow banana and fish sausage, land-and-sea skewers, chicken thighs stuffed with conch, tuna rolls, seafood rillettes, fish terrine with pineapple candied in aged rum, fish terrine with mild chili peppers…
